Stir fried Chinese big mustard green with fried tofu balls

This stir-fried Chinese big mustard green with fried tofu balls is simple to make. The preparation and cooking can be long, but you can prepare the Chinese big mustard green the night before to save time. Chinese big mustard green and fried tofu balls can be found and bought at a Chinese supermarket.
The fried tofu balls when bought at the store have a lot of oil on it. Most of the time we would rinse in boiling hot water for a few minutes. Take it out and rinse it in cold water and squeeze out the oil. Eating too much oil is not good for the health.
First, I cook the Chinese big mustard green. Put some water and close the lid. The water starts boiling, let it cook for a few minutes. Open lid. Take a piece of Chinese big mustard green and taste if it’s a bit crunchy and tender and able to eat it. It’s the right texture. Put in the seasoning and stir.
Second, I pour the fried tofu balls. Stir to mix. Pour the bowl of fried tofu balls into the large pan. Stir. Pour some water and close the lid. When the water starts boiling, let it cook by itself for a few minutes. Open the lid. Stir a bit. Let it continue cooking for a bit. Take a piece and taste it. If it’s a bit crunchy and tender, it is ready. Use a tong and put it onto a plate and set it aside.
Take a piece of fried tofu balls and taste if it is tender. If not, then cook it a bit longer. Let it simmer in the water. Once fried tofu balls are ready. Pour the plate of Chinese big mustard green into the large pan.
Stir a bit. Turn the heat back to high. Stir a bit to mix now, the Chinese big mustard green with fried tofu balls is ready.

Washing Big Chinese Mustard Green Vegetable:
1. Take the package of Chinese Mustard Green out of the fridge.
2. In the cupboard, take out a strainer and a big container to wash the Chinese Mustard Green.
3. Place the large container in the sink. Take the strainer and place it on the other sink next to it.
4. Take the Chinese Mustard Green out of the package and place it in the big container.
5. Separate each Chinese Mustard Green piece apart. Use a knife and cut off the end hard part.
6. Open each mustard green wide, wash it in the water very clean.
(Note: Make sure there is no dirty stuff in the vegetable.)
7. open the cold water and fill it up. Take the mustard green open the leaves wide. Shake it in water and rinse it in running water.
(Note: Make sure all the dirty stuff is out and each vegetable is clean.)
8. Fill the container with water and wash the mustard green 3-4 times, and put it aside
(Note: make sure it is all clean and has no dirty stuff.)
At the end of washing, fill the container with water. Soak the mustard green in a container of water for a few seconds and rinse it. Then put it in a strainer and set it aside.

Cutting the Chinese big mustard green:
1. Take the Chinese big green mustard and place it on the cutting board.
2. Use a knife and cut a bit on the bottom leaves apart from each other.
3. Rinse the big green mustard.
4. Take a knife and place it at an angle, at the bottom of the stem and cut into pieces.
5. Cut the leaves into pieces.
6. Continue the same steps for the rest of the mustard green.
7. When all done set it aside.

Preparing the garlic and ginger:
1. In the bag, take an onion. Use a knife and peel the skins.
2. Place it on the cutting board.
3. Cut it in half. Place it on the side and cut it into slices.
4. Put the onions in a bowl and set them aside.5. Put the ginger in a bowl and set it aside.
6. Take 4-5 garlic’s. Peel the skins and put garlic in a mid-size blender.
7. Blend the garlic. Put the blended garlic into a bowl and set it aside.

Preparing the fried tofu balls:
1. Take the package of fried tofu balls.
2. Open package. Pour in a strainer and rinse with water and set it aside.
3. Take a large pan. Put in some water
4. Turn the heat to high.
5. Put some Chinese vinegar. (Optional)
6. When the water starts boiling, pour in the tofu balls.
7. Soak the fried tofu balls in the water for a few minutes to take out the oil.
8. When ready, take the fried and put it on the strainer.
9. Turn off the heat.
10. Pour out the water from the large pan.
11. Open cold water and squeeze out all the oil from the fried tofu balls.
12. When all done, set it aside.

Cooking process:
1. In the cupboard, take out a large pan and place it on the stove.
2. Turn on the heat to high.
3. When the large pan is hot, put in some oil.
4. Put the garlic and onions and stir until done.
5. Put the bowl of Chinese big mustard green.
6. Stir a bit.
7. Sprinkle some salt, garlic powder and a bit of soya sauce.
8. Stir to mix
9. Pour the bowl of fried tofu balls into the large pan.
10. Stir to mix.
11. Pour some water and close the lid.
12. When the water starts boiling, let it cook by itself for a few minutes.
13. Open the lid. Stir a bit.
14. Let it continue cooking for a bit.
15. Take a piece and taste it. If it’s a bit crunchy and tender, that means it is ready. If not, then you need to cook it a bit longer.
(Note: keeping the lid off will prevent the mustard green from being not a good colour.)
16. When the Chinese big mustard green is ready. Use a tong and put it onto a plate and set it aside.
17. Take a piece of fried tofu balls and taste if tender. If not, then cook it a bit longer.
18. If it is not ready yet, turn to low heat and let it simmer for a few minutes.
19. Once fried tofu balls are ready. Pour the plate of Chinese big mustard green into the large pan.
20. Stir a bit. Turn the heat back to high. When water starts boiling, stir a bit.
21. Turn the heat off.
22. Pour all the Chinese big mustard green with fried tofu balls on a plate and place it on the table.
23. Enjoy.
