This is a steamed pampano fish topped with green onions. It is the 28th time I made this fish. You can find pampano fish at a Chinese supermarket. It usually comes in a frozen package. Sometimes when you choose pampapno fish it comes in small and big in the package. If you buy big, you can have more to eat compare to eating a small pampano fish. When buying a forzen fish, most of the time it needs to be clean. When you learn how to clean a fish, you will get the hang of it and can clean any kind of fish.
Making a good steam fish needs to be marinated with salt, turmeric, soya sauce, garlic powder, garlic and onions outside and inside. If your pampano does not have a fresh smell then put some Chinese cooking wine inside. It will make the fish taste better. If the pamapno is fresh, you do not need to put any cooking wine. The Chinese cooking wine can be bought at a Chinese supermarket. Most of the time I like to steam the pampano fish because it is simple and fast.

Preparing the onions, peppers and ginger:
1. Take an onion. Use a knife peeler and peel the onion skin.
2. Place it on the cutting board. Cut each onion in half. Put it on the side and cut it into slices.
3. Take ginger. Use a slice cutter and slice the ginger into strips of pieces
4. Place them into a bowl and set it aside.
5. Take a bag of small peppers.
6. Take a slice cutter and make sure the knife is attach to the slice cutter.
7. Slice the orange peppers into slices.
8. Place them into a bowl and set it aside.

Marinating the fish:
1. put the fish on the plate.
2. sprinkle some salt, garlic powder and pour some soya sauce and turmeric on the body
3. Repeat the same steps on the other side of the fish.
4. Inside the fish, sprinkle some salt, garlic powder and pour some soya sauce, turmeric and Chinese cooking wine.
5. Spread some onions on top of the fish, inside and some at the bottom of the plate.
6. In the bowl, take some sliced ginger strips and spread them on top of the fish. Then put some inside the fish. Then topped some sliced pieces of orange peppers.
(Note: Marinating inside the fish and putting ginger and onions can take the non-fresh smell out of the fish.)

Steaming the pampano fish:
1. In the cupboard, Take a large pan and place it on the stove.
2. Put some water, the amount you need to steam the fish.
3. Put a steamer tray. Close the lid.
4. Once the water starts boiling, put the fish inside the steamer tray.
5. Take a couple of green beans and wash it. Then place it around the steamer. Close the lid.
6. Cook the fish for 8 minutes for a small fish and a large fish 12-13 minutes.
7. Once the fish is ready. Use a knife and stick it in the middle to see if it touches the bone. Then you know it’s ready. If not, you need to cook a bit longer.
8. Once it is ready. Turn of the heat.
9. In the fridge, take out some green onions and rinse it.
10. Chop up some green onion. Sprinkle some green onions on top of the fish.
11`. Use a plate clipper or kitchen mittens, take out the steam pampano fish and place it on the table.

Boiled shrimp

This is a plate of shrimps, simple and easy to make, and it does not take long. When buying from shrimp, they come in different sizes and brands. I decided to use big shrimps. All you need to do is just heat them up in the oven. They are fast and does not take long. It is the fastest way without having to make your homemade chicken nuggets. This is steamed whole chicken. It’s very delicious and simple to make. This time I bought the whole chicken that had 1 in the package. If you want to buy 2 whole chicken in the package, you can have more to eat. Buying a chicken comes in different size in the package. I like to eat chicken a lot. It is one of my favorite food. When cleaning the chicken is very simple.

5. Take out all the dirty stuff in chicken.
6. Rinse the chicken inside until it is clean.

can heat it in the microwave.

This stir-fried lettuce with Chinese preserved wet bean curd is simple to make. This time I used the Chinese preserved wet bean curd to make a simple stir-fried using a red leaf lettuce.

If you do not like it, you can make a normal stir-fried red leaf lettuce with onions and ginger. If you do not like eating the red leaf lettuce, you can use the normal lettuce.
The perfect combination with this dish is rice. The lettuces are a very healthy vegetable and good for the eyes. Preparing the lettuce:
1. Take the package of lettuce and remove the wrapper.
2. Rinse the lettuce.
3. Remove the outer part of the lettuce.
(Note: if it’s dirty, you need to wash it 3 times.)
4. Take a knife and remove any red colour or not-good colour directly into the garbage.
5. Place the lettuce on the cutting board and cut it in half.
6. Separate the lettuce apart as many times as you need to eat, and cut the lettuce into pieces.
7. Each time the lettuce is cut, put it into the mixing bowl.
8. When all is cut into the mixing bowl. Rinse the lettuce and pour out the water and set it aside.

Preparing garlic:
1. Take 2 ginger.
2. Take a flat knife. Place the knife on top of the garlic. Use your palm and hit the flat part hard.
3. repeat the same thing for the other garlic.

Cooking process:
1. In the cupboard, take out a large pan and place it on the stove.
2. Turn the heat to medium-low.
3. When the pan is hot, put in some oil.
4. In the fridge, take out a jar of preserve wet bean curd.
5. Take out 2 pieces of preserve bean wet curd and put it into the large pan.
6. Then put in the onions and ginger.
7. Use a cooking spatula, press down the preserve wet bean curd. Let it cook by itself
8. Stir the onions and ginger. If there is not enough oil in the large pan, then put some more oil.
9. When the preserve bean curd onion and ginger are ready, put the lettuce into the large pan.
10. Stir a bit.
11. Pour in some water and close the lid. Let the lettuce cook for a few minutes.
12. When the water starts boiling, open the lid and stir a bit.
(Note: Lettuce cooking time is fast, so keep an eye on it.)
13. Make sure the lettuce is not that hard. Let it cook for another minute to be sure it is fully cooked.
14. Mix the preserve wet bean curd. Ensure it coated everywhere with the onions and ginger.
15. Once it is ready, turn off the heat. scoop up all the lettuce with preserve wet bean curd onion and ginger onto a plate and place it on the table.

Butterball Turkey topped with onions and sliced of potatoes

For this year’s Thanksgiving I bought a butter ball turkey. This is a 5-6 pound of turkey. The size of the turkey is kind of big. It’s simple to bake, but the cooking time takes longer. Putting some potatoes and onions on top of the turkey makes the turkey look nicer. I put some aluminum foil on the wings and drumsticks to prevent it from getting burned.
When cutting the turkey, the knife has to be slanted at an angle to have a perfect piece of turkey. I prefer eating dark meat because it tastes good. I prefer white meats to be used in making sandwiches. You can choose what meat you want to eat as your desire.
Kids and adults would love this turkey. The best time to bake the turkey is early in the morning. You can have the turkey for lunch or dinner. The taste of the meat is good. The best combination that goes well with this turkey is rice. With the turkey and sauce, you can mix in the rice. You can also make a turkey sandwich with some gravy sauce and a bowl of salad on the side. I like this turkey a lot.
If you know you will not finish it in 2-3 days, you can freeze it in the freezer and take it out to defrost when you eat it. Try making the turkey, and you will know how good this turkey will taste.

Direction:
(Turkey needs to be in the fridge to unfreeze for 2-3 days.)
Cleaning the turkey:
1. Take the turkey out of the fridge and place it in the sink.
2. Put on a pair of dishwasher gloves.
3. Take a pair of kitchen scissors and open the package of the turkey.
4. Open the turkey body-wide. Take the bag of hearts out of the turkey.
5. Check if there is any dirty stuff inside the turkey. If there are, remove them.
6. Rinse the turkey.
7. Put some salt and rub it around the turkey.
8. Place the turkey on a strainer with a container over it.
9. Remove the plastic holder from the turkey.
10. Set the turkey aside.

Preparation:
1. In the bag, take out 3-4 onions and Peel the onion skin.
2. Take a slice cutter and cut into thin round pieces directly into a bowl.
3. Take 4-5 potatoes out of the bag and put them in a bowl.
4. Wash each potatoes.
5. Take a potato knife peeler and peel all the potatoes skins.
(Note: Make sure all the potatoes are peeled nice and clean.)
6. Each potatoes that are peeled, put in a bowl.
7. When they are all finished peeling. Soak all the potatoes in the bowl for 2-3 minutes.
8. Take the bowl of potatoes and pour the water out into the sink.
9. Take the potatoes and cut them into chunk pieces, but not too small. Just the right size and set it aside.

Cooking process:
1. In the cupboard, take out a rectangular roasting pan.
2. Put the turkey on the rectangular roasting pan.
3. Put some potatoes around the roasting pan.
4. Put some slices of round onions on top of the turkey and around the pan.
5. Take some aluminum foil and wrap it around the wings and the drum stick to prevent it from burning.
6. Preheat the oven at 350f (190 degrees) for 10 minutes or until the oven is hot.
7. When the oven is hot, place the turkey into the oven and bake for 3-4 hours.
(Note: different size of the turkey, baking time can be different.)
8. When 3 hours are up. Put on a pair of kitchen mittens and open the oven. Take the turkey out.
Use a knife and insert it into the turkey. If blood comes out, it means it is not ready. You need to bake it for another 1 hour.
9. Once it is ready, insert the knife again. If there is no blood, the turkey is ready. Turn the heat off.

Craving the turkey process:
1. Take a knife, a fork and some glass tupperwares.
2. Remove all the potatoes and onions and put them into a bowl.
3. Use a kitchen soup spoon and scoop up all the sauce into a bowl.
4. Take a knife and cut off the wings and the drumsticks. Place it into a tupperware.
5. Put the knife at the slanted angle and cut all the turkey meat into pieces. Put it into a tupperwares.
6. When all done cutting, close the lid and put it in the fridge. If you know you will not finish it in 2-3 days, you can freeze it in the freezer and take it out to defrost when you eat it.
